Michelin Chef Carlos Gaytán debuts 3 Mexican spots in Disneyland

Michelin-starred Chef Carlos Gaytán and Patina Restaurant Group announced the grand opening of three new Mexican dining concepts – Paseo, Céntrico, and Tiendita – in the Downtown Disney District at the Disneyland Resort.

Gaytán, a world-renowned figure in the culinary industry, brings his expertise and Mexican heritage to Anaheim for his inaugural venture on the West Coast, ushering in an era of authentic yet refined Mexican cuisine.

As the first Mexican-born chef to achieve a coveted Michelin star, Gaytán serves as a prominent ambassador of Mexican cuisine, featured extensively in various food, travel, and lifestyle media outlets, including BRAVO’s “Top Chef” in 2013. His culinary journey commenced in Chicago, ascending through esteemed kitchens such as the North Shore Hotel and Bistro Margot before establishing his own restaurant, Mexique, blending Mexican heritage with French culinary techniques.

Gaytán expressed gratitude for the opportunity to merge his love for his home country, family, and cooking at Paseo, Céntrico, and Tiendita, reflecting on his upbringing and culinary philosophy.

“We are thrilled to share Chef Gaytán’s culinary vision with guests and introduce his world-renowned Mexican cuisine as we continue to grow our presence at Downtown Disney District,” said John Kolaski, President of Patina Restaurant Group during the ribbon-cutting ceremony.

Paseo welcomes guests with a contemporary dining room and bar adorned with native accents celebrating Mexican culture. The menu features elevated presentations of Mexican delicacies and childhood favorites, showcasing Gaytán’s culinary prowess and heritage.

Céntrico serves as a social hub with open, airy spaces reminiscent of a Mexican hacienda, offering a menu of Mexican staples and modern twists alongside a robust cocktail selection.

Tiendita provides quick-service dining without compromising on quality, offering beloved classics and high-quality Mexican cuisine in a vibrant, glass-encased space.

Designed by award-winning Mexican architect Jorge Gracia, with furnishings from La Metropolitana and bespoke dinnerware from Anfora, Paseo and Céntrico encapsulate the essence of Mexican craftsmanship and design.

Walk-in service is currently available, with reservations opening on June 1 for Paseo and Céntrico, serving lunch and dinner. Paseo is presently open for dinner, with weekday lunch and weekend brunch service forthcoming.
