Gideon’s Bakehouse Announces New Disney Springs Concept: Six Ravens
The new establishment marks a significant shift for the brand, pivoting from the sugary decadence of their signature cakes and cookies toward a menu focused on savory hand pies and local collaborations.
The centerpiece of Six Ravens is a creation the team calls the “Coffyn.” Utilizing the original Old English term for a hand pie, these snacks feature a fluffy yeast bread filled with various savory ingredients.
In a nod to the brand’s origins, the menu will be a collaborative effort. Gideon’s owner Steve Lewis in, an Instagram post, noted that the concept was inspired by his own start as a “secret menu” item at The Polite Pig. To pay that spirit forward, Six Ravens will feature fillings crafted by a rotating roster of Central Florida’s top culinary chefs, bringing local Orlando flavors to the international stage of Disney Springs.
What’s on the Menu?
While specific recipes remain under wraps, the bakery confirmed the new location will serve as a high-energy “grab-and-go” spot designed to fuel guests heading into the theme parks. The offerings will include:
- Signature Coffyns: Hand pies featuring flavors from Gideon’s and guest chefs.
- Potato Sides: Hearty pairings to complement the savory dough.
- Local Draft Beer: A curated selection of Florida brews.
- New Desserts: Specialized sweets distinct from the standard Gideon’s lineup.
The announcement comes during what Lewis describes as the company’s “biggest year of growth.” Despite initial hesitations about opening another small-scale shop, the desire to showcase the Orlando food scene proved too strong to ignore.
“It’s important to pay it forward and bring more local flavors to the international crowds we meet every day,” the company shared in an official statement.
Six Ravens is scheduled to open at Disney Springs later this year. An exact opening date and specific location within the shopping district have not yet been released.
