Trying out the Unofficial Disney Parks Cookbook – Cheeseburger Spring Rolls

Fans of the Magic Kingdom’s cheeseburger spring rolls: Rejoice! You can now make them at home. And it’s easy!

The recipe is one of 100 Disney fan favorites included in the new “Unofficial Disney Parks Cookbook,” by Ashley Craft ($14 in hardcover).

The book includes classics from all six U.S. parks, including:

  • Churros and beignets from Disneyland
  • Dole Whip, Gaston’s Giant Cinnamon Rolls and the Grey Stuff from the Magic Kingdom
  • Napoleons from France and School Bread from Norway in Epcot
  • Ronto Wraps and both Blue and Green Milk from Galaxy’s Edge Hollywood Studios
  • Cheeseburger Steamed Pods and Baked Macaroni and Cheese with Pulled Pork from Animal Kingdom
  • Corn Dogs and Jack-Jack’s Num Num Cookies from Disney’s California Adventure

Of course there are also some classics that you’ll find all over the world of Disney, including Mickey-shaped pretzels, waffles, ice cream sandwiches and ice cream bars.

Some of the recipes require specialized equipment, like an ice cream maker or Mickey-shaped cookie cutters. But you could whip up most of them with what you already have in your kitchen.

To give the cookbook a whirl, we decided to try making the elusive Cheeseburger Spring Rolls as part of our Super Bowl spread. Usually sold at a cart near the entrance to Adventureland, these savory treats have been a little hard to come by since the parks reopened last summer. (For the record, the cookbook also includes the cart’s other offering, Pizza Spring Rolls.)

We made some adjustments to the recipe — primarily, using an air fryer instead of pan frying — and the results were as close as you could get to the original. Below you’ll find the recipe as we cooked it, which will explain the odd numbers, like a yield of 19 rolls.

While they’re called spring rolls, they look and taste like egg rolls, even without using any egg. Whatever we call them, I never thought I’d make these from scratch, so I’m feeling very accomplished — maybe even enough to try to tackle Gaston’s Giant Cinnamon Rolls.

Cheeseburger Spring Rolls

Adapted from “The Unofficial Disney Parks Cookbook” by Ashley Craft.

Ingredients

  • Olive oil cooking spray
  • 1/2 medium yellow onion, peeled and diced
  • 1 teaspoon minced garlic
  • 1.3 pounds ground beef
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 tablespoon yellow mustard
  • 1 tablespoon ketchup
  • 1-1/4 cups shredded cheddar cheese
  • 19 egg roll wrappers

Instructions

  1. Spray a large skillet with cooking spray. Heat the pan to medium heat, then add onion and garlic. Cook 2 minutes. Add the beef, salt, and pepper. Cook until beef is no longer pink, about 5 minutes.
  2. Remote pan from heat and drain. Mix mustard and ketchup into beef mixture and allow to cool slightly, about 10 minutes.
  3. Pre-heat your air fryer to 390 degrees.
  4. On a dry surface, lay 1 egg roll wrapper with a point facing toward you. Spoon 2 tablespoons beef mixture onto middle of wrapper. Sprinkle 1 tablespoon cheese onto meat. Using your fingers or a brush, wet the edges of the wrapper. This will help seal the roll. Roll up like a burrito, making sure all filling is sealed inside. Repeat with remaining wraps and fillings.
  5. Spray both sides of the rolls lightly with olive oil cooking spray. Place rolls seam-side down into your air fryer. Make sure they aren’t touching. We could fit four rolls at a time. Cook for 5 minutes; flip your rolls and then cook for an additional 3 minutes. Remove and repeat until all your rolls are cooked.
  6. Serve with hamburger condiments.

When we made this recipe, we bought the smallest package of lean ground beef we could find: 1.3 pounds. This yielded 19 spring rolls. Buying a slightly larger package will yield an even 20, which is perfect for a package of egg roll wrappers (which we found in the produce section with the vegan food). When we make this recipe again, we will probably also add some diced pickles to the meat mixture; we’re big pickle fans over here.
